July 11th Groceries



Total spent $77.07 for a total so far this month of $223.86. I don’t have eat out totals for you today, but they are running less than usual so far.

Organics purchased include: coffee, milk, cream, eggs. Non-organic meat and dairy include frozen chicken breast, meatballs, shredded cheese and yogurt.

Menus for the week:

Monday: Grilled chicken breasts, egg noodles, steamed green beans

Tuesday: Quiche, steamed broccoli and sliced mangos

Wednesday: Just me, leftovers

Thursday: Vegan Shepard’s pie, peaches, blueberry pie

Friday: Spaghetti and meatballs, watermelon

  2. Ingredients: 1 cup pink lentils, 2 vegan boullion cubes, 2 cups water, 1 carrot diced, 1 celery rib diced, 3 tablespoons flour, 1/2 cup water, 1 teaspoon each of following: basil, oregano, rosemary, 1/4 teaspoon pepper, 3 cups mashed potatoes.
    In large skillet combine 2 cups water, boullion, lentils, carrot and celery. Cook on medium heat about 15 minutes stirring frequently.Take off heat and allow to cool slighly while doing next step. In a small bowl mix into paste 3 tablespoons flour and 1/2 cup water (hint: start w/ flour in the bowl and add a small amount of the water, mix thoughly, repeat till all the water is mixed in smoothly). When the paste is smooth, add the spices. Add this to the lentil mixture and retrun to the heat and simmer until it thickens, stirring constantly. Spead thismixture evenly in a 2 quart baking dish. Top with mashed potatoes. Bake uncovered at 400 degrees F for 20 minutes.
    Optional: you can add a tablespoon of Worsteshire sauce or soy sauce to the flour paste mixture if you like.

    This makes enough for my family of 4 for 2 meals.
